Anyone know the best way to enjoy snook? My girlfriend was pretty dissapointed when she nailed a nice snook at Phillip Island but pan fried the skin-on fillets in butter and they went all mushy and gelatenous. I suspect she put too much snook in the pan at once and the pan lost heat. I've also tried snook in foil with butter and lemon and the same gelatenous result. I suspect they need to fried quick in oil perhaps? Any tips would be appreciated as snook are a fish that can be targeted by inexperienced spearos like my girlfriend - good training for her for KG whiting.

I coat mine in breadcrumbs and fry it in butter. Works a treat...
You could really use any white fish recipe though.

I have best way to enjoy snook Never wash fish fillets in tap water! Soak in milk for 15 minutes and pat dry with paper towels. This removes any fishy taste from dried blood, etc. Dust fillets in flour and dip in egg wash, then coat with a mixture of cornflake crumbs, garlic powder, italian seasoning, salt & pepper. Pan fry in butter/olive oil until the fillets are golden. You'll love it, I guarantee.

ive had them in thai fish cakes and they were bloody beautiful. mind you most things will go well in fish cakes :lol:

oh and old salt.. were you using an electric range by any chance? because we had that problem in our last house when we had an electric system until we changed it. if you give it a go again try hitting the mushy fish with high heat. ive always found that its easier to cook most soft food that way personally.

Clean and fill guts with thin half slices of lemon, capers & parsely ... remember gills
Put some more thin slices of lemon on top, put over the bbq grill for 15-20 mins depending on size at low fire, don't overcook otherwise goes dry, remove
serve on plate with a sprinkle of olive oil and more fresh capers and slices of tomato
riesling or pinot gris
enjoy
