Any suggestions on how to serve it?
I read filleted and skinned ... but looking for interesting variations / options

Dragon fish.
leave the head on when you fillett and snap the spine just behind the head, twist the head 90 degrees, put a tomato in its gob and put the frame on a plate to steam.
Do a stir fry with heaps of garlic and shredded ginger and as many different coloured vegies as you can get your hands on and of course the fish.
Put the stir fry on the steamed frame for presentation.
Remember the cheeks.

Yes ... Dragon fish ... as seen in Master Chef in the HK episode of series 1
Excellent suggestion, thank you Greg
However I am not quite sure the groper's head will present as well as a snapper (for example) as it's big rubbery lips and teeth take the "dragon" effect away
:) :)

I've done it a couple of times with a blue throat, works really well. I'll do it to the next groper I get for sure.
