Because i have been slack in adding anything to this forum of late, here is a recipe. As octopussy has been slaying the snapper I though this might go well. Works well with almost any fish just dont use to bigger pieces.
¼ cup cornflour 2 eggs, lightly beaten ½ tsp sambal oelek (or fresh red chilli) 4 snapper fillets (pinkie) cut in half lengthwise (boneless and skinless) 3 spring onions, chopped large 2 teaspoons grated ginger 2 garlic cloves, sliced ½ cup (125ml) water ¼ cup (60ml) thick hoisin sauce ¼ cup (60ml) thick sweet chilli sauce
1 tablespoon sugar
Place cornflour in a bowl & whisk in eggs until smooth. Stir in sambal oelek. Heat oil in a wok or large saucepan until sizzling or use deep fryer. Dip fish pieces in batter, drain off excess, and cook in batches. Drain. Heat 1 tsp oil in a wok or large frying pan & stir-spring onions, ginger and garlic for 1 minute. Blend in water, sauce and sugar. Bring to boil. Toss through fish. Serve with rice and garnish with fresh chilli or shredded spring onion etc ect
