Scallops - steamed in the shell with ginger, soy & greens
Second batch of scallops, and just got more on the weekend, and another Rick Stein's recipe to recommend ... Easy and quick Scallops should still be pulsating when about to be steamed
(10 scallops for 2 people) 1 teaspoon freshly grated ginger 1 table spoon dark soy sauce 1 table spoon sesame seed oil 1 table spoon coriander 1 table spoon green onion
Clean the scallops and keep them attached but loose to the shell Sprinkle a tiny bit of the fresh ginger over ... fresh ginger is strong and might overpower the scallop so use just a small pinch Put on the steamer at medium heat for 4 minutes and until the scallops are just set On the side warm up the mixture of dark soy sauce and sesame seed oil Quickly arrange on 2 warm plates and pour over the mix above Sprinkle over the finely chopped coriander and green onion
