Had a good dive at Sorrento back beach on sat where I took a magpie perch. First Maggie I've got and wondering the best ways to cook it?

I was thinking marinade is sauce of sugar, fish sauce, chilli, onion, garlic, ginger and a little sesame oil and slap it on the BBQ. Thoughts?

Marinated and on the barby sounds good but the first time i try a new fish I like to keep it plain so I can really taste what its like.

filleted marinated and grilled is the way and i also agree with Greg
therefore would suggest vry light marinate and for no more than 30 mins
maggie is very nice delicate and almost sweet
if you really want to use chilly and garlic go very easy with it as it will cover the taste of the fish

Thanks guys. I might go with the light marinade on the barby idea. I think i might try butterfly fillet it too. This could get interesting, I'll let you all know how i go!

Ended up doing:

sugar, salt, pepper, hot red curry paste, oil and a splash of lime juice in a large bowl and mixing it up (about half a cup worth of it all)

cut maggie's head off and scored the body, dipped and rubbed mix into flesh and slapped straight on the barbie. Once nearly cooked, spooned a little more mix over it.

The fish cooked to perfection in no time and the curry paste wasnt too strong that i couldnt taste the fish. Really nice. Fish just fell off the bones and flesh was slightly sweet.

Very easy, very tastey :D
