Hey Guys

Currently have been using a Marttiini filleting knife (9inch blade) for the last 5 years which is still going strong due to maintaining with a good diamond sharpening steel. Have had no issues with this brand but don't know a lot about knives so I thought there is enough hunters/fishermen on this site that could offer their recommendations.

So first of all my reason for wanting another knife is that im wanting to fillet more pan sized flat fish such as sweep, bream, trevally, pinkies, etc rather than cooking whole. After filleting a good 10 fish the other day that mainly comprised of sweep and maggies, i found my current knife to be a tad bit large, bulky and the blade to stiff for making smaller intricate cuts.

What good quality small knives do you guys recommend?

I also have another question regarding how long do diamond sharpening steels last for?

I'm a big fan of sashimi knives. Carbatec sell a pretty good one for under $50. When I was fishmongering I pretty much only used one of these and a 6 inch curved bladed one that was quite stiff. There are plenty of good brands, any of the reputable ones will be good if it's comfy in your hand.
I don't know how long a diamond steel last but I do know it's a long time.

Hey Greg,

When you say "stiff", the knife still has flex not like kitchen knife? (Like pic below)

The knife I use still has flex but not as much flex as the smaller models due to a thicker blade.
99% that this is a pic of my current knife I found on the web.

because they are thin they do flex a bit but not while your cutting. Some knives sold for filleting flex way to much. I found I got better recovery rates with a stiff blade in the same amount of time.

i have two knives,
one is a victorinox microban, these are a great little knife and hold their edge great, they come in a range of size and shapes.
the other is a forever sharp filleting knife which is also good, this one has a little to much flex on larger bodied fish.

i would rate the victorinox knifes and from memory there a pretty good price.
