Just wondering if anyone knows of a way of keeping battered fish fresh for lunch the next day? Just had some Jew battered and was bewdiful, some left so I want it for work tomorrow, last time I wrapped it, put it in the fridge and it went soggy? Shattered!!! Any thoughts?

I'd suggest you dont wrap it in anything like gladwrap or foil etc... as it wont be able to breath. Then, as the fish sweats, it turns soggy.

I'd wrap it in some paper towel to absorb the excess moisture, then place it on a saucer in the fridge.

You probably wont get that same crispy texture, because the moisture from the fish fillet will still be absorbed by the batter. But at least the bottom wont be all soggy and wet.

I think the only thing that might work would be to reheat it in an oven, and not a microwave, turning it over at least once during heating.

Cheers for the responses guys, Had these things in mind already tho, was hoping for that mythical fix that obviously doesn't exist bar a 12v cooker in the van!

I have seen Sausage Rolls now come in this new fangled bag, which when heated in a Mircowave, is supposed to come out crispy. Although I haven't tried them myself, so I couldn't tell you if they work.

You need to dry it in the reheat mate, havent tried those bags that shorerider talked of but have seen a roast done in a microwave that came out crispy. Helps to have a fan forced or convection microwave i think.

Otherwise my other absolute stunner of an idea is to pack the battered fillet in a kilo or two of salt, whip it out, dust it off and place it on top of your muffler while you idle your car for about an hour, turning occasionally. Obviously this needs some pre planning. When smoko is comes around turn your car off, retrieve your fillet and munch on.
