Went for a dive today and saw a big bastard in a hole but didn't know what it was.
Thought it was a ling but not sure. What are the most distinguishing features separating a ling & a conger? I have seen pictures of ling with spots & without spots, is this correct?
I know ling are good eating but what is conger like??
Need help to work this out
Cheers

look for the little barbles on the chin of a ling & the camo pattern, I'm pretty good at finding them so they stand out easy for me over a conger.
Ling are a beaut fish on the chew, Where as Congers have a terrible slime that stinks and a million bones, but they actually have quite a nice firm white flesh that's ok to eat. All the slime and oil in them makes an epic burley trail too..had all sorts of fish come in on a conger chunk.

anyway...

One of the finest meals I have ever had was conger eel in a Vietnamese soup.
