Hey,
i stumbled upon this video made by reef watch for the great victorian fish count. It shows most vic species underwater and lists their name. Great idea for novice divers to have a look through as you'll see what the fish look like underwater, and get a basic view of a few species

cheers, this i really handy. just starting up and seeing what they actually look like in the water instead of a book makes much more sense for identification.

I was going to ask if anyone could help with edibility of these but thought why not get off my bum and do it myself - all info from Sea Fishes of Southern Australia and Vic Recreational Fishing Guide (please correct me if I've missed any protected species). In the order they appear:

Edibility is from 1 to 4 stars

Maori Wrasse ** min size 23 cm, bag limit 5 (all wrasse species except bluethroat)
Bluethroat Wrasse **, 27 cm, 5
Purple Wrasse, **, 23 cm, 5 (all wrasse)
Senator Wrasse, **, 23 cm, 5 (all wrasse)
Blue Groper - protected species
Bastard Trumpeter, ***
Magpie Morwong, **, 23 cm, 5 (all morwong)
Banded Morwong, ***, 23 cm, 5 (all morwong)
Dusky Morwong, *, 23 cm, 5 (all morwong)
Red Morwong, ***, 23 cm, 5 (all morwong)
Long-Snouted Boarfish, ***, bag limit 1 (all boarfish)
Western Blue Devil, ***
Horseshoe Leatherjacket, ***, bag limit 20 (all leatherjackets)
Six-spined Leatherjacket, ***, bag limit 20 (all leatherjackets)
Yellow-striped Leatherjacket, ***, bag limit 20 (all leatherjackets)
Herring Cale, *
Shaws Cowfish - poisonous
Weedy Seadragon - protected
Victorian Scalyfin, **

I don't - I wouldn't have the foggiest. Just going by what's in the book Sea Fishes of Southern Australia. More than happy to hear something different from people who've eaten 'em.
