The fallow are croaking at the moment. The bucks make a croaking noise to call the females. If you youtube it you can hear the noise. They will be doing this for the next couple of weeks. They generally will croak first thing in the morning. Its the easiest time of year to hunt them.

Good work!! How do they taste??? Do you chop it up and freeze it?. Interested to know what you do with it all also the cleaning process, I imagine there is a bit more cuts in one of them then the old flat head lol?

The buck in the photo was in rut. When fallow bucks are in rut the meat has a really strong gamey. Taste. The back legs are the worst so they are kept for dog meat. The rest of it is turned into jerky using a dehydrator. We got a couple of does as well and you chop them up the same as a lamb. Fallow deer are one of the best tasting deer imo.

Fallow deer is a type of deer Greg not a meat, theres 7 types of deer in Aus if you no where to look. And it's venison. Haven't had the privilege of trying the meat from a fallow, but have had some rather tasty yearling samba!

They certainly aren't a freaking vegetable Watto. Don't think they are a grain either. If something shits and shags then it's meat regardless of whether it be bird, fish or venison.
